Knowing next to nothing about DayZ standalone (and not really wanting to know much tbh!), why do all the screenshots seem to be almost in black and white?
Is the whole game desaturated in colour?

Well after playing Dayz for couple of hours I must say, I don't really like it.
It is a pointless game where guys fighting over a tuna can and you have to spend 3 hours scavenging for gear just to be shot down by some one else over and over again.

DayZ is an extremely subjective game. It seems there are either those who absolutely love and worship the game, or there are those that despise the game. There's little middle ground.

Also, how did you play? Did you remain at the South side of the map? Were you with anyone? Playing DayZ alone greatly reduces your survival rate and is largely pointless. Plus it's really boring playing alone (it's an MMO) and not how the game should be played in my opinion.

I'm assuming you were playing alone since you mentioned fighting over a tuna can. If you're playing with group of people then you shouldn't be worrying about food. Instead, you'll be worrying about getting the most weapons and killing any other 'gangs' that get in your way. In the future, playable vehicles and player created constructions will be introduced. Just imagine the intense firefights and car chases - not to mention helicopters.

I don't love it (yet)
I don't hate it.

At the moment there isn't much to do after finding a pristine m4, however all this will change.  The construction element will change the dynamic A LOT
